RECIPE FOR Baba ghanoush

Ingredients:

  • 1 large eggplant
  • 2 tablespoons tahini

Instructions:

  1. Preheat your grill or broiler to high heat.
  2. Prick the eggplant all over with a fork. Grill or broil the eggplant for 20-30 minutes, turning occasionally, until the skin is charred and the flesh is soft.
  3. Remove the eggplant from the grill or broiler and let it cool.
  4. Once the eggplant is cool enough to handle, peel off the skin and discard.
